The food i miss the most so far is cheese. Yep, i love it. Mozzerella, Parmesan, queso cabrales, Cheddar, Swiss, gorgonzola, rosemary goat cheese, feta. Yum. Thing is, Guatemalans don’t eat cheese. Therefore, it is REALLY hard to come by. We saw a tiny selection in a tourist grocery store in Antigua once, and it was astronomically expensive. Nowadays, though, i would even pay the big bucks for some quality cheese- except we now live about 8 hours from there.

I misspoke when I said Guatemalans don’t eat cheese. There ARE actually two types of cheese here, but even those are hard to find. What they think I am asking for when I ask for cheese, they call “Queso Kraft”. Yep, Kraft American singles. Barf. To them, it’s that awesome, modern stuff that rich gringoes eat and they wish they could eat too. Because it’s modern. And from a rich country. The other cheese they occasionally eat is queso casero, a homemade cheese that is salty and much like feta. Honestly, it is not bad, but i am pretty tired of it- and even THAT stuff is expensive.

That’s why i was so excited in the market last weekend, when our friend the wandering cheese merchant showed us a special suprise in her basket of wares. She called it “pizza cheese”, which i figured might be mozzerella. We bought it for the staggering price of 25q (about a third of a day’s wages) and i tasted it. Stringy, salty, firm… Mozzerella! So, i made a pizza. Check it out. It was quite tasty, like a blast from home, though the “mozzerella” had a flaw… it doesn’t melt! HAHAHAHAH! It was tasty nonetheless.
